The extra virgin oil
Our organic extra virgin olive oil of superior quality is obtained directly from olives, and solely by mechanical means.
The oil is obtained only from Coratina olives of our trees, directly harvested from the tree and cold pressed in oil mill within 24 hours from the harvest, using exclusively cold pressing methods, in order to guarantee excellent organoleptic characteristics and preserve the health promoting components .

After pressing, the oil is not filtered but only decanted, letting it naturally fall in stainless steel vessels, and then, packed in cans or bottles.
The colour of the oil is deep green to straw yellow, the taste is fruity but not spicy, with low acidity. It is perfect when used raw, on every food, and superb on season’s salads and fish, but you can also use it for frying.
